Ingredients
  

  • 16 small leeks
  • 1 small tin of tuna crumbs in oil
  • 1 egg
  • 1 tbsp capers
  • 4 pickles
  • 1 tbsp strong mustard coffee
  • 1 tsp . tablespoon vinegar
  • 3 tbsp soup oil
  • 8 sprigs of flat-leaf parsley
  • 8 sprigs of chives
  • pepper
  • salt

Instructions
 

  • 1 Carefully clean the leeks, leaving themhalf green. Steam them untiluntil they are very tender, about 15 min.At the same time, immerse the egg in a pot of water and bring to the boil for 10 minutes so that it ishard. Peel it and roughly chop it as well as thepickles and capers.
    2 Chop the herbs. Prepare a vinaigrette withsalt, pepper, mustard, vinegar and oil.Emulsify it with a fork, then add the minceof egg, capers, gherkins, chopped herbs anddrained tuna. Mix well. Arrange the leekswarm or cold on a serving platter, and accompany them with the sauce on the side
