  • 2 bunches of small new turnips
  • 3 tomatoes
  • 3 shallots
  • 2 sprigs of fresh thyme
  • 700 g broad beans
  • 75 g butter
  • 3 pinches allspice
  • ground black pepper
  • coarse gray salt of Guérande
  • 1 tbsp. tablespoon hazelnut oil
  • parchment paper


  • 1 – Shell the broad beans. Boil a pot of water.Scald the tomatoes for 30 seconds, remove them usingslotted spoon, cool them. In the same wateradd the beans and boil them for 1 min. Leave themcool before peeling them. Remove the skin from the tomatoes. Dice them. Divide the turnips into quarters, leaving a few centimeters of stem. Peel and mince the shallots.
    2 -Cut 6 sheets of parchment paper, butter itcenter, place the turnips, sprinkle with thyme, dicetomatoes, beans and shallots. Salt, pepper andsprinkle with allspice. Spread the butterin shavings in the papillotes. Close the foil,without squeezing too much so that the air circulates, folding the edges hermetically.
    3 Place the papillotes in the perforated compartmentin a steamer, cover and cook for 25 min. Serve as is, drizzled with a drizzle of hazelnut oil as a starter or as an accompaniment to white meat.
