Ingredients
  

  • 8 small leeks
  • 1 small heart of green cabbage
  • 4 extra-fresh eggs
  • 100 g mimolette
  • 1 tbsp soup of soy sauce
  • 1 tsp tsp. tablespoon vinegar
  • 4 tbsp . oil
  • 1 tbsp. 1 tbsp. tablespoonssesame seeds
  • salt
  • ground pepper

Instructions
 

  • 1 Clean the leeks, removing 2/3 of the green.Separate the leaves from the cabbage, wash them, cut them intostraps. Steam them with the leeksfor 15 mins. At the same time, dip the eggsin a pan of salted boiling water (salt will make peeling easier). Allow 5 minutes of cooking time for them toare calves. Drain them, refresh them with watercold, peel them.
    2 Prepare the vinaigrette: mix in a bowl,ground pepper, soy sauce, vinegar and oil.Emulsify with a fork. Cut the mimolette intoshavings with a peeler.
    3Let the leeks and cabbage cool down, then put them in a salad bowl. Add the mimolette. Pour thevinaigrette, sprinkle with sesame, stir. Divide the salad among serving plates, place aegg in each and score it so that the yolkescapes. Serve immediately
